My spaghetti game got a lot better when I started making sauce by roasting tomatoes+garlic with olive oil first then adding other stuff. Roast at 400-450 for 40 minutes or so, until edges of veggies caramelize, mash or blend. Now I prep and can all the tomatoes I grow like that. It's so good. The roasting improves the flavor and color a lot and makes the final sauce taste more 'mature' straight out of the pot.

Idk anything about actual food prep so save your smug "omg that's not a real bolognese" attitude for the discord

I'll never stop eating spaghetti. I'm eating it right now. I'm slurping up noodles and getting delicious sauce everywhere.

That's how I do it too, except I would recommend adding some carrots as well. The sweetness helps smooth the acid bite of the tomato without the use of something like sugar syrup or honey.

I'll try that next time. I can never grow carrots worth a damn but I'll just buy some

I've made my own sauce and ketchups from garden-grown tomatoes. It was awesome and a fun project, but ngl when I say most days I'm content with some Prego.
