    The paper's authors clearly said that they didn't have the resources or connections to explore other filled pasta, so they chose to focus mostly on Mediterranean and select other filled pasta shapes. They never meant it to be exhaustive. It literally says:

    The addition of other filled pasta and dumpling varieties from across Italy and Eurasia and the inclusion of other informative characters that can add further resolution to the phylogenetic inference are the next steps in this research. Evaluation of elements such as taste and methods of consumption would require surveys and experimental design and can perhaps be considered in a subsequent, more inclusive study on all Eurasian pasta ripiena.

    I have my own issues with the paper, but they never claimed to have mapped all filled pasta shapes in the world.
