So I've found a couple food meals that are both healthy and are ones that I really enjoy eating, but I've found that I eat the same thing over and over again. Its all kind of variations on the same theme. Let me just give some examples and you'll probably get the idea.
Oatmeal + spoon of peanutbutter stirred in + frozen berries to make it instantly edible
Yogurt + Granola + Berries
Granola + Soymilk + Banana Slices

Yeah, I really like berries, there's big bags of frozen ones in the freezer section that's like the one thing not super overpriced at my local grocery center and they last forver because they are frozen.
But anyway, ... HELP! I need more variety. I definitely want to add in beans and cruciferous vegetables, but I'm not sure how to do that other than like making a stir fry or some shit. Ideally I'd like easy food meals like the ones listed above that I can build and chow down on in a matter of minutes. I'm not AGAINST cooking per say, but I'm looking more for snaack time meals, ya know, doing the whole eat 6 small snacks throughout the day instead of just one giant bigass meal.
I like to go to the spice aisle and pick something out that I haven't tried and then cut up some zucchini, onion, mushroom, tomato, really whatever veg I have on hand but zucchini or squash is always the base for me, sautee it in a little oil and then add the spice.
My favorites are Jamaican jerk curry powder, Cajun seasoning with gumbo file or coconut curry.
Don't be intimidated by sautéing if you haven't done it before. Put the densest veggies in first because they'll take the longest to cook. Keep the heat on medium and keep it all moving around so it doesn't burn. Poke it with a fork every now and then and take it off the heat once you're happy with the doneness.
If you're still worried about burning it, another trick is to put it on high until it starts to brown, then add liquid like broth and turn it down to a simmer. That will keep the inside of the vegetables cooking but prevent the outside from burning. And when the broth boils off, the food will have picked up flavor from the broth. And if it's not done enough for you, you can always add a little more broth.
If you want to make a whole meal out of it, you can add whatever protein you like. It's super easy and cheap.
