Haha well I did it the easy way, the store near me sells vegan cheeses and this nice mince stuff, also like sour cream and some good tofu sausages.
Basically I followed this "recipe" but its pretty much as simple as buying the ingredients, frying it in a large pan or pot, adding broth, pasta, almond milk, and letting it simmer for a while. Add the vegan cheddar near the end.
Ive made a lot of "cheesy" pasta sauces before by blending nutritional yeast, some soaked cashews or various seeds, and garlic + onions. Turns out really good and you can vary the ingredients for sharper/nuttier cheese. So im sure if the store near ya doesn't have vegan cheeses that would work. As for the mince you miiight be able to finely chop up tofu add a lot of seasonings and fry it in grape or olive oil. I made this recipe a lot for tacos.
