Excited to try. What are you preferred brewing methods for this stuff. Does it go well in a moka pot? I have a boring drip machine for my day to day, but have you done any aeropress or other methods with it that are wildly delicious?

Also, any other good coffee roasters out there worth supporting?

    If it's the Schools for Chiapas stuff it's a medium-dark roast and will be good with basically any preparation method.

    Depends on how it’s been roasted, moka pots generally work better with darker roasts. I find Mexican beans tend to have a flavor profile somewhere between Central/South American beans and East African beans, so if it’s a lighter roast you might be better off with a pour over or an aeropress (personally I think everything works well with an aeropress).
