pretty much following this recipe except with a bunch of crumbled regular-firm tofu shoved in to make it more shakshuka-y. even had some coriander to make it super fancy. was good on a rainy saturday morning.

Bear in mind that the target audience is relatively affluent, and that you can safely make it without some of the more expensive items (idk how much avocado oil costs, but I'm guessing it's more than I want to spend on cooking oil).
oh yeah definitely, 90% of these vegan recipe sites will have an infuriating habit of taking a dirt cheap meal and for whatever reason make sure it has at least one bougie ingredient thats impossible to find, crazy expensive, and guaranteed that youll never use again. the good ones at least tell you which ones you can swap out for something more sensible (or exclude entirely)
i used bog standard vegetable oil, brown onion, and maple syrup rather than avocado oil, shallots, and coconut sugar and i never felt like it was worse for any of those
