I don't know much about Caribbean or Latin cooking, haven't made my way to that part of the culinary world yet (save for a trip to Mexico City a while back which blew my mind from a foodie perspective). I have been learning a bit about Cajun more recently, maybe once I've gotten a handle on gumbo and dirty rice it would be a logical next step to look south. I spend a fair bit of time in Toronto (or was when travel was a thing) where there's a big Caribbean/West Indian community, and the food you get from the little hole in the wall Caribbean restaurants is fucked up good.
