Meal one: chicken breast with rice

Cut the chicken breasts off, serve with rice 🍚 or potatoes 🥔 and baked or steamed broccoli 🥦 or carrots 🥕 season with Montreal steak spice or whatever else you feel like. Easy peazy

Meal two: Gumbo or sautéed chicken

Remove the rest of the easy to access meat into a bowl. Sauté some onion 🧅 and garlic 🧄 in a frying pan or pot (you can also fry with hot peppers 🌶 if you’re feeling spicy) and add a hefty amount of Cajun spice, salt and pepper and fry until it browns and sticks to the bottom of the pan/pot. Deglaze with a bunch of broth (beef or chicken, whatever) mix. This is your flavour base. Add the chicken and mix. If it starts to dry out, add more broth.

You can either serve this with rice and veg on the side, or add that into the pot with extra broth to make some gumbo.

Meal three: Ramen

Take the remaining bones and scrap meat and make a bunch of broth by boiling it in a large pot over the course of an afternoon or so. Boil with diced onions, garlic, plenty of salt and pepper to taste, whatever other spices you feel like, and some chopped veg like carrots 🥕 celery etc.

Strain the solid bits out using a strainer. From this you can make single servings of ramen 🍜! Boil some noodles and add to a serving of broth on the stove top. Poach an egg 🥚 directly in the broth with the noodles, garnish with green onions and sesame seeds if you have them. Add whatever else you want!

    When I was a homeless drug addict, the loss leader rotisserie chickens from super markets were basically my one meal a day if I could scrape the extra money. It came ready cooked and could feed three or four people if you shared it right.
