    Which one tastes more like chicken: hen of the woods or chicken of the woods?

      Hen of the woods- or Rams Head/Sheep’s Head/Maitake. Turkey tails are similar, shelf like; but not really edible. I think you can make tinctures and such out of them. These are totally cook em up and eat em.

    Maitake is such a good mushroom. Pan-fried it replicates crispy bacon bits pretty well and adds such a rich flavour to omelettes. I really need to start some logs for it at some point.

      Trying to decide what all I should use it for. Definitely doing a mushroom & wild rice soup tonight, but I’ll have lots leftover. I might try my hand at pickling some, otherwise turn them into a duxelle and freeze it for later.

        I haven't given pickling a try. Usually they're my breakfast mushroom or I put them in pasta with a white sauce.
