I made some risotto with oyster mushrooms! The rice was a little bit under (been a minute since i made it, probably added stock a bit too fast) but the flavor was good and the mushrooms were soooooooooo yummy . First time trying oyster mushrooms, i pan seared them and finished them with butter, garlic, and thyme. I had to keep myself from picking them off as i was cooking the risotto cause they were just so damn good. Will definitely be eating them more often! The soup is some leftover italian sausage and zucchini soup i had, normally it would also have pasta but i ran out. The focaccia was store bought with rosemary and was pretty good.
All in all a very tasty meal and well worth the effort
