I use a 1/3rd cup measure and make these in a non stick skillet with no oil or butter to get that even brown look.

        It is just the way pancake is always done here in Finland. American style never was a thing here, we just do crepes on the frying pan and these oven pancakes.

        It's:

        3 eggs

        5 deciliters of milk

        150 grams of flour (wheat)

        100grams of sourdough starter

        2 tbs caster sugar

        1 teaspoon salt

        Mix everything and let ferment an hour or two, can put it in the fridge overnight too.

        Baking: Baking paper on an oven pan, a few bits of cold butter scattered on it. Pour the mixture on top. Bake in a 225 celsius oven (middle rack) for about 20 minutes.

        I do love me some AmeriKKKan blueberry or pecan pancakes as well, I also put sourdough in those.

          ahh yeah that's what we know as a 'dutch baby' where i'm at, poured into a hot cast iron pan and baked it is very similar. I have never tried it with sourdough but it sounds lovely. Yours is divine very nice job :)
