Lol, i know pigeon peas in rice is phenomenal, I'll usually have that at Dominican hot bars or any Caribbean food places. I saw one that used coconut milk, but i haven't really went through with making it.
I would pan fry some angel hair pasta with onions for my rice, and adds a nice texture. Maybe next time I'm throwing carrots, celery, and whatever else I find, though I usually do that when I fry rice.
coconut milk in rice is bomb. you should def try it.
basically anything you like can be added to rice, because rice so inoffensive. it just takes on the character of whatever youre cooking it with and fills it out into a meal.

Pidgeon Peas and Coconut Milk in rice is the way to go. 1 can of Peas, 1 can of coconut milk, 2 cups rice, 1.5 cup water (iirc, do the liquid level according to the type of rice you're using either way) and a lil dash of scotch bonnet sauce.
Goes great with the cabbage too (1 small cabbage shredded, about an equal amount of carrot, ~1cup broth and a dash of apple cider vinegar and maybe some onions and pepers too, seasoned with corriander, a bit of cumin, and salt and pepper)
and I like to do an overnight marinade with jerk sauce on lil pork cutlets and then grill them. the rice and cabbage lasts amazingly well as leftovers and grilling the marinated pork cutlets only takes like 10m so you can eat a full plate of jerk food for like a week with very minimal effort.
