Ngl that was one of my biggest disappointments. One of my favourite things in CK2 was increasing the odds of the devil spawn NPC event and watching funny shit like the Holy Roman Empire getting formed by some random count with laser eyes.
As usual in nearly every change for the worse in PDX games, it's fault of the forum crowd. Only this time it wasn't the usual minmaxer horde but the boring brigade, who hate anything fun. So CK3 is remarkably devoid of weirder parts like Aztec invasions, societies, bear events etc.
Between that tendency and their complete disregard for all the actually cool suggestions on how to make non-Norse-related cultures actually interesting (are the Byzantines still feudal?), while also being so adamant making the map go all the way to (feudal) India and (feudal) Cameroon, CK3 has probably been my biggest video game let down in quite a while.
Complete disagreement. CK3 is definitely best game in series and probably even best PDX game. The only two disappointing things about it (also the no magic events as i said above, but it isn't really disappointing) was the Iberia DLC which was pointless and underwhelming and incredibly slow pace of development in the first two years, which make the actual main problem with the game - being compared with 10 years of active development of its predecessor - somewhat worse. If anything, the way they are developing it - with broad DLC's involving every single culture and mostly well integrating mechanisms - is heads above CK2 with its unconnected snips or games like EU4 or HoI 4 with regional DLCs.
Blueballing byzaboos is also a bonus instead of malus.

Also their 3D models are too resource intensive.

If you blueball them long enough, their balls turn purple. They should like that.
