We recently got an immersion blender. Homemade sauce is so easy now. I'm never going back to store bought.

Just take some oil, put it in a pan, add salt, pepper, garlic and optional hot peppers. Cook for a few seconds until it's aromatic and add either balsamic vinegar or red wine or both and reduce until mostly gone. Then add herbs like oregano, basil, rosemary, and cook for like a minute. Then add diced tomatoes, one can or equivalent and about 4ish tbsp of water. Then cook at a simmer for 4-5 minutes.

Blend. Add sugar if it needs it.

Cook for 5-10 minutes until it reaches the thickness you want.

Done. That's it. So easy.

    The immersion blender makes the blend step easy. No transferring from pot to blender back to pot, losing valuable sauce, and likely spilling some on yourself and getting a nice burn.

    It's also 1000% easier to clean than the traditional blender. And you can blend right on the stove (if you're really in a rush). I tend not to, though, because I am paranoid that the wire will get too close to the burner and catch on fire.
