We recently got an immersion blender. Homemade sauce is so easy now. I'm never going back to store bought.

Just take some oil, put it in a pan, add salt, pepper, garlic and optional hot peppers. Cook for a few seconds until it's aromatic and add either balsamic vinegar or red wine or both and reduce until mostly gone. Then add herbs like oregano, basil, rosemary, and cook for like a minute. Then add diced tomatoes, one can or equivalent and about 4ish tbsp of water. Then cook at a simmer for 4-5 minutes.

Blend. Add sugar if it needs it.

Cook for 5-10 minutes until it reaches the thickness you want.

Done. That's it. So easy.

    Would you happen to know if there's a way to jar homemade tomato sauce? I've done like jam before, but I've always wanted to try making pasta sauce.

      It's the same process for if you add enough acid to the sauce to bring it below the acid-canning threshold. If not, you have to use a pressure canner.
