Looks super nice. Quick question - is your folding seam along the bottom? As a general rule, if you're not scoring the loaf, then you want to bake seam side up. It gives it a cool rustic look but more important lets the air escape. Enjoy!
I tried scoring but the bread was too gooey and I didn't want the dutch oven to cool too much. So this time it was seam side down. Didn't know you could just flip it for the same effect!
It makes it look really cool and rigid at the top but also will give it a more even shape. Here's my most photogenic loaf from a few months ago, you can see how it bulges along the seam lines.
