I really want to try ordering Indian takeout but I know that cilantro (and coriander) are used in a lot of the spices themselves so I'm not really sure what to do. Any advice would be appreciated!

Also, I was wondering about Indian restaurants in the US in general. India is a huge and diverse country, so there's probably a lot of different culinary traditions there as well. When it comes to Indian restaurants in the US, which cultures tend to be the most represented?

Most Indian restaurants will be basically Punjabi/Pakistani food.

Your best bet will actually be to make your own Indian food. Then you can choose which spices to add or not add. Be careful if you use spice blends like Garam Masala which could have coriander etc themselves.

Other than that, try to find a “Tibetan/Jain/Navratri” etc restaurant. They’ll probably have simpler food.

South Indian/Sri Lankan is another thing you could try.
