Create has to genuinely be the most exciting thing in Minecraft modding right now. The fact that you can just arbitrarily make your own mobile multiblock contraptions out of literally anything is amazing, along with how robust the trains and things like sequenced gearshifts are.

immersive by itself is just too grindy to get anything started, and this is coming from someone who plays gregtech new horizons singleplayer.
