Then I started having ones about forgetting classes, or projects, or whatever, and it's rather disorienting to wake up and think 'oh god, that class' and then remember you're 30 and haven't taken any classes in 3 years
Me too. For me there's a context in the dream of "huh, I'm still signed on for these classes and I've been gone for weeks, I haven't been dropped and I'm still liable for whatever I missed."
I don't have nightmares often, but when I do, it's about discovering I forgot one of my classes for an entire semester

I've had the exact same experience, except I've also started having nightmares like that about high school too for some reason
