Probably tofu, as tricky as it is to do well, though peppers and onions are great too.
maybe not quite grill but ive got one of those convection bbqs with the lid, and the best thing is half a butternut pumpkin with the seeds scooped out and replaced with crushed garlic and rosemary and brushed over with oil so it doesnt burn, and slow cooked on low heat on top of the grill with the lid on for like an hour and a half. comes out so smoky and soft and garlicky, so good

Potato wedges with rosemary, salt, paprika. Grilled squash with balsamic vinegar reduction.
Both very easy and delicious. You can microwave or boil the potato slices to save time.
