So from my earlier post, you might've heard I'm sick. Instead of spending time anxious, I decided to make use of some old carrots.
I just sorta winged it, but I'm happy with the results.
Here's the recipe (without the numbers lol) - it's vegan!
A lot of carrots, maybe 8, finely chopped
One white onion,
3 tablespoonfuls of minced garlic
1 stick vegan butter
~ 3 cups of vegetable broth
~ 3 cups of water
About a teaspoon of dried basil
Salt and pepper to taste (I needed a lot more salt than I thought
Let the ingredients boil on medium heat for about an hour or until the carrots are soft.
I used a hand mixer to break down the carrots and then I cooked them more until I got a texture I liked.
Hey well done! One thing for soup I'd recommend is to simmer (185 to 205 fahrenheit) your soups rather than boil, helps the ingredients and especially the broth retain more of the flavor. Boiling is one those few qualitative differences in cooking, and keeping the temp just below boiling can really help. I'd also throw some kosher salt in that water at the beginning, really helps preserve/bring out flavors
