The tlacoyo is part of the Mexican gastronomy originating in the center of the country and dates back to before the arrival of the Spaniards to the American territory.

In particular, the tlacoyo consists of a kind of oval pie made of nixtamalized blue corn that can be filled with different foods of vegetable or animal origin, such as beans, lima beans, green peas, chicharrón or cottage cheese.
At the moment of serving, cream, cheese, salsa, nopales, onion and cilantro are usually added.
It is believed that tlacoyo was used by the indigenous people of Mesoamerica as "itacate" when they made long trips.
Its name comes from the Nahuatl tlaoyo which means "shelled corn patty".
In tlaolli it means "dried corn kernels" and in tlacualli it means "food".
Tlacoyos are a dish of pre-Hispanic origin that originally had no dairy ingredients, such as cream or cheese, which were incorporated after the arrival of the Spaniards. However, it is believed that the rest of the ingredients are preserved as they were originally prepared, handmade and cooked on a comal.

it's a union job where i get paid decent and have decent medical benefits though. i'm just going to force myself to get to a year on the job so i can get fmla and be able to take off when i have to.
it's just fucked up the hoops you have to jump through to actually get to that point. in a lot of other countries if you're sick you just don't have to go to work, and you don't have to pay a bunch of loot to go to the doctor.
