The tlacoyo is part of the Mexican gastronomy originating in the center of the country and dates back to before the arrival of the Spaniards to the American territory.

In particular, the tlacoyo consists of a kind of oval pie made of nixtamalized blue corn that can be filled with different foods of vegetable or animal origin, such as beans, lima beans, green peas, chicharrón or cottage cheese.
At the moment of serving, cream, cheese, salsa, nopales, onion and cilantro are usually added.
It is believed that tlacoyo was used by the indigenous people of Mesoamerica as "itacate" when they made long trips.
Its name comes from the Nahuatl tlaoyo which means "shelled corn patty".
In tlaolli it means "dried corn kernels" and in tlacualli it means "food".
Tlacoyos are a dish of pre-Hispanic origin that originally had no dairy ingredients, such as cream or cheese, which were incorporated after the arrival of the Spaniards. However, it is believed that the rest of the ingredients are preserved as they were originally prepared, handmade and cooked on a comal.

Indeed! I use this line of logic a lot when talking to people about unionizing. Certain types of workers (mostly PMC) workers think of themselves as being paid "well enough", but they still make a small fraction of what their labor product is sold for.

Just FYI, Grover Furr conciders the first kotkin book to be quite accurate with not much needing correction. It's just the other two books dealing with Stalin's time as leader that veers off historical fact and into anti-communist fiction
If you want annoying and hilarious, during the Civil War section, kotkin constantly rags on the Reds for having commissars, being forced to expropriate food to feed the red army, and generally being a messy bitch during its fight to survive then mentions quickly that literally all the factions are also doing the exact same thing (and worse before moving on with little elabotation). He even calls Alexander Kolchak "a man of Valor and patriotism" (also heaps praise on other counter-revolutionary figures of the civil war in contrast to how he always smears the communists) while quietly slipping in that Kolchak's favorite book was "reputed to be" the protocols of the elders of zion.

i fucking hate america. i was having back issues and i had to call out, so they gave me a verbal warning, about a month ago. now i have a sinus infection, and i'm getting a warning letter because i have to call out. and i got the sinus infection at work, because someone was forced to come to work sick because they didn't want to get a warning letter.
absences aren't excused due to medical conditions or with a doctors note, unless you are eligible for FMLA, which has a year long employment requirement. so now that i've gotten employee health insurance, if i need to actually use any of it, i'll be disciplined at my job for not being there that day.

i feel like a really unspoken thing about the bottom rungs of the working class is that are you basically held hostage at work unless you have lost a limb or are visibly in extremely poor health
when I worked fast food my manager had morning sickness and she would puke in the garbage can next to the drive thru cash register in between orders
this same manager basically held me hostage once when I had (developed) pneumonia because we were so short staffed that me leaving early would have fucked her shift
i had a huge oil burn on my chest once and just worked through it because I was the only cook working that day loool

it's a union job where i get paid decent and have decent medical benefits though. i'm just going to force myself to get to a year on the job so i can get fmla and be able to take off when i have to.
it's just fucked up the hoops you have to jump through to actually get to that point. in a lot of other countries if you're sick you just don't have to go to work, and you don't have to pay a bunch of loot to go to the doctor.
