A store near where I work was selling habanero peppers by weight like candy at somewhere around $14/kg (give or take a bit, I'm not great at currency conversion), so I bought a bunch and have started fermenting them together with other ingredients to make some hot sauce for myself. The left jar is 10 habanero peppers, one green apple, a yellow bell pepper and a bunch of mint leaves. The right one is 10 habaneros, 1 and a half oranges, 6 cloves of garlic and some carrots.
I just opened the right one and started turning it into sauce after 12 days, since it started to bubble less when I opened it. The left one I will keep fermenting. It still sounds like a newly opened can of soda whenever you release the pressure, so I don't think it's done yet.
Either way, I think the jars are beautiful in their own right, and tending to them so they don't leak/explode is a nice daily ritual.

It's brine (water and salt).
