My partner is pesca, I am omni (please nobody scold me, I know its bad and have no excuses). I am trying to use buying these peach chips as an excuse to be more social and have people over to cook for (plus its a great excuse to hang outside), so a nice rib rack for some non-vegan friends sounds like a great idea!
That said, honestly, pork was my first thought as I was ordering peach wood. Anything else come to your mind?

Midwest, major American city, duck is reasonable for me to grab as a treat. Thanks for the idea! I've been wanting to try tea smoked food too, but not sure a charcoal smoker is the right vessel for that unless I get like a pound or two of tea. How much did you use?
