Chicken street tacos

Chicken thigh seasoned with adobo, black pepper, and paprika(for color). Cooked in a skillet with olive oil. Cut into roughly half inch pieces.

Topped with a mixture of diced onions, cilantro, soy sauce, and fresh squeezed lime juice.

Warm tortillas in a pan with a small bit of olive oil, and fill with chicken and onion mixture. I use flour “fajita sized” tortillas but that’s a personal preference, corn tortillas also work great. Squeeze a fresh lime quarter over it before eating.

Blackberry Mojito

Muddle ~8 mint leaves in a Collins glass. Add 2oz white rum, 1oz lime juice, 1/4oz simple syrup, 1/4oz blackberry syrup. Add ice and stir. Fill with club soda and give a final stir. Garnish with a sprig of mint.

The blackberry syrup was 1:1:1 by volume blackberries, sugar, and water brought to a short boil and then strained.

    Soy sauce is super useful for so many things. It’s basically concentrated savory/salt juice. It does a great job of bringing out the savory flavors of whatever you’re eating and binding everything together. Similar thing as salt where in small amounts it just makes everything taste more
