There's a government office for deciding what is officially French language. I forget what it's called but it shouldn't bee too hard to google.
l'Académie Française. Sometimes they're a bag of dicks and decide that COVID is feminine and not masculine months after everyone started using le COVID.
Sometimes they try to be funny and come out with stuff like, you should say that Batman is LA meilleuRE chauve-souris (the best (feminine) bat) because bat is female in French, and NOT because of his relationship with Robin which is kinda homophobic.
Then you have Quebec micromanaging everyone. Like a Happy Meal is still a Happy Meal in France, but in Canada it's a Joyeux festin.
