Turns out, you can slice 'em up, stick 'em in a dehydrator, and they can be eaten as is or tossed in a dish to rehydrate.
They've got the texture of banana/plaintain chips, a bit of crispyness. And they're mildly sweet.
Got four mason jars full of the chips and I just filled up the dehydrator again today. With a bucket full of squash waiting their turn when the dehydrator gets finished doing its thing tomorrow.
Got any recipes in mind? Maybe a nice fall soup?
As far as the dried stuff, it'll just go in whatever soup/stew we happen to be making that needs some extra bulk.
Have a handful of small pumpkins that are finished and a few more still on green vines to harvest later. Might make a pumpkin soup later in the year and/or use the pumpkin as a replacement for tomatoes in a white bean chili.
