Apples are really weird in that if you grow the seed from an apple you eat it won't make the same tree. They're all really a crapshoot from my understanding in what you get so it's pretty common to grow a sturdy base apple tree and graft on the desired genetic apple branch

Yeah, I'm aware. But I still want to see someone grow a bunch of apple trees from seed just to see what the rates of "good ones" are
