        What's the dimensions on these? I was reading that link you posted yesterday and having a hard time imagining boiling... like logs. Is that like a rubbermaid container then?

          Each log is about 6” in diameter and 12” long I would say. It’s a big ass Rubbermaid tote probably 20 gal or so, about 14” deep. It’s 1.5’ x 3’ roughly.

          The reason for sous vide tek is exactly what you mentioned… my “big ass pot” that could hold “a shitload of logs” was actually like 10” deep and could hold maybe 2. I think the only way to do a full boil would be with like a big ass crawfish pot and a propane burner… but even then you’re getting maybe 3 at a time.

          You can sous vide chicken to 135 as long as you hold the temp high for long enough… pasteurization essentially. I’m hoping for the same effect here, instead of a full boil for an hour I’m going as high as I can for 6 or so.

          I won’t be able to get sterile but hopefully give the chicken of the woods enough of an edge to establish before anything else can take hold. It should work… in theory… but starting out with an unfavored species I’m already sledding up hill.

          On the plus side I will learn a lot either way, and I can use the materials for other species that aren’t as finicky.

    Could you sterilize them with an oven? Like, set it to 100C+ and bake it for a few hours. Or, if you need moisture you could toss a pan of water on the bottom rack to steam them.

      I thought about that as well. I think the answer is yes, but baking logs would smell really bad. Maybe vacuum sealing then baking would work.

        What about getting one of those electric smokers?

        Looks like there are some cheaper ones that could probably fit about 12 of these logs going for under $300. The one I saw had 4 two foot wide racks that are 22" deep, so you could definitely fit several logs in it.

        They get to 275F which is about 135C so that should do it

        Edit: Here's one that's $127

        If you need humidity, you could add water to the chip tray.

          Yeah this would totally work I think, steam sterilization takes 3 hours, you’d just have to be very careful to keep them moist.

          Sous vide tek worked ok I will post an update tomorrow maybe
