I did a 23andme gene test and results came out that I am 0,0245% Italian and I want to honor my heritage. Since I lost a few teeth, an arm and about 3 toes while making hand gestures, I am going to stick with cooking.     Unironically I would be interested in this. I am currently watching the sopranos for the first time and I'm in the last season. I found some vegan salami online and I want to order it for the finale, but i'd be down to make some as well. I have experience making vegan pepperoni, but i've never had real gabbagool on account of stopping eating animal products long before I would have had a chance to try any.

        It's really good! You start with seitan and mix in seasonings. I even bought some vegan casings and a sausage extruder.
