    What's a pide? Nice colors for the plating. Also great chiffonade on the cabbage; it looks so yummy to me right now. Cilantro on top? With the olives too, what an interesting bunch of flavors, sounds really good.

      A pide is a Turkish cousin of the pizza. These are filled with a beef and tomato sauce with middle eastern spices and topped with parsley and onions.

      The cabbage is red cabbage that has been brined, washed and pickled in lemon juice, vinegar and olive oil. A nice crunchy tang to accompany the pides. The chilis are small hot pickled Turkish chilies.

          Yes. It is just a standard 65% hydration bread dough, like for pizza. I used bread flour and the extra proteines really made the dough easier to work with.
