Every time I buy asparagus, within a week its all floppy and flaccid. I just want to have rigid asparagus that has a nice crunch to it. Please tell me your secrets

      Yep, in water in the fridge. Keeps for days and days. Also, keep your avacado on the counter until it's perfect hardness, then move them in the fridge. They will stop ripening and keep for days and days

    Shock it after cooking. (Shocking means putting it in an ice water bath immediately after cooking to cool it down.)

    To cook from raw: blanch it (boil in saltwater) for 1-1.5 minutes. maybe less. Take it out and shock it (put it in ice water) immediately. It should cool down quickly. From there, flash it in a pan (sear briefly in a pan at high heat) for a minute or so with some oil. Optionally drizzle a bit of lemon juice. Then serve.

    If it's already droopy before you cook it, it's going to be harder to keep it firm in the end result, but don't despair!

    Don't buy it a week in advance. I think Alton Brown had some thing about a glass with some water in it and a shower cap, but a week is still a pretty long time for asparagus.

      Yeah that's fair, normally I wouldn't I'm just trying to limit grocery trips cause of COVID, so for now I guess grocery night will be asparagus night

        It also depends on the asparagus you buy. Good grocery stores keep the bunches sitting in pools of water so they're nice and crisp. But they also tend to be pricier supermarkets :-\

    Yeah, def just have to use it within a couple days of buying! My partner and I like to rub them with olive oil and whatever seasonings and pop them in an oven at like 400-450 (depends on your oven/how cooked you like them) for 15-20 min. It's pretty simple and goes great with basically any kind of pasta dish!
