I just followed a recipe so I'm not even sure what the milk/eggs are for functionally. I've used pumpkin puree as a replacement for eggs and butter in the past to make some low fat brownies that, consequentially, might also have been vegan. It's been a while though.
Maybe someone can chime in about the milk(I think it just adds fat to the dish), but adding egg to any dish is to keep everything together. It acts as a binder for all the ingredients (think like an omelet or scrambled eggs are like jelloee or some shit). In technical terms it's called an emulsifier.

Made a pumpkin pie yesterday too, doesn't look as fucking fantastic as yours though!!
It has egg and condensed milk, but there are probably workarounds.
