I've made these sugar cookies several times and they're ridiculously good. A hand mixer will do, but it's much easier with a stand mixer. I prefer to subtract 1 or 2 tablespoons of butter and add a pinch of ground cloves.
Lemon cookies are massively underrated. I'll see if I can find my girlfriend's recipe for them but really any lemon cookie will be top tier

Snickerdoodles will never fail you. Find a recipe that uses butter creamed with the sugar.

These blueberry lemon cookies are the freaking bomb. I used Follow Your Heart vegan egg, so I assume they will turn out the same if you use chicken eggs.
Also one of my favorite ezpz recipes is 1 box spice cake mix + 1 16oz can pumpkin for soft, moist cake cookies
