Any ideas what to do with the rest of the Thai chillis I have, it was like $1.50 for an huge tray.
ugggh i love curry but my partner is so picky and she tried it for the first time and rejected it. that looks so fucking good. make some sweet chili sauce with the extra chilis! pretty sure you only need vinegar, sugar, and maybe cornstarch?

Sweet chilli sauce is easy to make and keeps for ages, if you have some jars laying around
Pickle them! I recently got a bunch of them at a farm stand and have been adding chopped pickled peppers to everything, or maybe fire roast and make a spicy sauce
I got a baaaad first impression of coconut curry from some premade lunch (Think it was Sukhi's kitchen?) and haven't tried it since. I think you convinced me to try cooking it myself.
