I've gotten HUUUGE on beets recently. I'll roast them like potatoes with garlic and cheese, gets rid of any of the bitterness and makes for a delicious side dish ⛷
I made beetroot soup for lunch yester day. I pretended it was the blood of the bourgeoisie I was drinking.
Just made these yesterday and the sweetness of the beet combined with spices just makes it so damn good. :marx-ok:
Try pairing them with like a citrus vinaigrette and maybe some nice fresh herbs. So tasty.
