Cuts through the fat and spice and you get like an explosion of flavors as it all melds in your mouth. Highly recommended.
Just chop the onions, put them in a bowl, and throw a couple tablespoons of ACV on top then put it in the fridge. Doesn't even need long, just like 15-30 minutes to chill together.
It's great. Works good for vegan and non.
Fully pickling them is probably even better tbh, but you don't even need to do that.

In Peru there’s something called salsa criolla with is sliced red onion mixed with lime juice and salt and pepper and maybe ají amarillo. But you can put it on anything.
What kind of onion?
I know red work well raw but idk what you're using.
