Just looking for some nice Vegetarian/Vegan mushroom recipes, keen for links if you have them.

I have access to most average mushroom types: button, portobello, king oyster, etc.

    Sauteed portobello with garlic and butter. I honestly had no idea how much rich umami flavor came directly from the portobellos.

      Yeah they have a lot of flavour when cooked right, and I know my mate uses salt to draw moister out of them before marinading (apparently they retain flavour better that way, not sure how true it is but kind of makes sense).

      I'll definitely give the garlic portobello a go, sounds like it'll be nice for a weekend breakfast.

    Learn how to make mushroom confit. You can use it in a ton of recipes. We wild forage here and make 10-12 jars a season.

    I've been using this recipe as my go-to for mushroom soup. It's super easy and the result is fantastic, especially with some stale bread to dip into it. I add some worcestershire sauce when I'm cooking the mushrooms, which usually has anchovies in it, but I'm pretty sure there are some vegetarian or even vegan alternatives.
