What ya do with the leafy celery bits?

    The leafy bits are pretty herby honestly, I like to set them aside and sprinkle them onto my food at the end, kinda like how you would with parsley or cilantro

        Definitely. They just taste like concentrated celery flavor. Used to work in a restaurant that used them in crab cakes, and the cooks would always keep the leaves on the side for staff to chop up and use as they wanted. I liked them on just about everything.
