Random question, do you have any meat/ground beef substitute vegan recipes that are quick to prepare? Most of what I've seen requires a pressure cooker, which tends to be a PITA if I don't want to meal prep for a week.
Preferably with tons of soy and gluten because those taste the best IMO.
TVP. You can get it in crumble form, just gotta soak it in warm water for a little bit and strain it but then it's ready for the pan, the cooking time is a lot less than meat too.
My favorite - mushrooms, onions, and walnuts minced in a food processor. Add some soy sauce, smoked paprika, and thyme. So so good. Similar to this, though you can make this spiced however you want Not 100% a meat analogue, but lots of super rich, deep flavor, and not super unhealthy.
This is a repost I reclaimed from a vegan sub, but there's a place like this in my neighborhood and it's so damn good.
