Yeah those strips are just ok tasting. Vegans are used to them though so I wouldn't worry too much about the flavor. As long as you have a good sauce/side and get them crispy enough, it should be ok

In the olden days, Buddhist monks would wash balls of dough/flour under running water while massaging it so all the carbohydrates would wash away but the protein of the wheat (gluten) stayed behind in a bubble-gum like goop. It's pretty flavorless and if you over-knead it, the texture ends up like chewing gum/bouncy ball. If you don't knead it enough, it doesn't keep stick together and disintegrates. It requires skill/practice. Simmering it in a broth is very common to add flavor. After all that, you could cut it into strips and season/fry it some more
