Just use Element! It's open source and E2EE by default.
It's also based on a federated open source protocol called Matrix so you can actually run your own server if you want to. Element is very easy to use and you don't even need a phone number!

Element is the "correct" answer, but I suggest that people use Telegram if they want their friends to switch over as well. It has some significant flaws as far as privacy goes, but nothing dealbreaking (compared to something like Facebook Messenger) imo. The UX is 10/10 so it's more likely that they will actually use it. There's also been a lot of adoption over the past year or two in general.

Would you still do so even with the weird stuff with Signal that's been coming up this past week? I think we are on the same page, just ending up in different places at the end of the day 🤷♂️

If you can get them to use Signal instead of Telegram then go for it. Signal is still secure and E2EE at the end of the day. Just don't send Signal any donations and send them Matrix's way instead.
