If you watch TNG first, watch the first episode of Season 1 and then skip immediately to Season 2. The show really struggled in its first season.
Otherwise, I've known people who started with DS9 and didn't have any problems. You lose some context and a bunch of fun callbacks, but it's still great television. Almost 30 years later and it's still an amazing show!
