Black bean and oatmeal (or sometimes brown rice) burgers are my favorite. I usually saute some (read: lots of) minced onion and garlic and add that to the mix. They're best baked in the oven.
My mother used to have a juicer she used every day and the leftover veggie pulp was really nice in these as well.
You can make a decent vegan sour cream with just tofu (that's technically from a bean), lemon juice, and salt in a blender. I use this a lot as a stand in for yoghurt as well when making naan.
