seriously i've already seen alternatives to all the other breakfast meats but not this one please advise
Huh, I didn't know what scrapple actually was until this post.
As a processed meat product, you can use the usual vegan trick of adding fat and protein and going heavy on spices since that's what these poverty meat scrap things were meant to do anyways: make garbage taste good.
For fat, refined coconut oil can't be beat since it's solid at room temp. Other vegetable oils are often just fine.
For protein, you want something you can brine or flavor without it having a ton of its own flavor. Mincing (seasoned) Seitan with frozen/chilled coconut oil chunk would probably work perfectly. You could also use a vegan meat substitute in a pinch.
Once you have that mince, you can follow your favorite recipe.
