Looooong time cook here: I'm not American, but to my understanding things are pretty similar in this regard between countries, this is bullshit. Health inspectors don't do surprise visits, maybe it's a thing if you're on thin ice, but the LAST thing a health inspector wants to do is make you shut down, they aren't paid to do it it's more work and it doesn't feel good on a personal level. Passing inspection is not hard at all and if you're even remotely concerned, people shouldn't be eating there. The vast majority of places keep a higher standard for cleanliness and food safety than the government. For the most part as well, those of us making your food genuinely do want you to have a great meal and wish things were at a slower pace so we could make everyone's food as good as possible and allergies and food safety are taken very seriously. These are in the serious fuck up category, like, you gotta show you don't give a fuck or can't keep track a few times for there to be consequences but for example, last week we had to get pepperoni from a different supplier and a few days after using it, a table asked if our pep was gluten free, it normally is but that made it click we had a different kind and upon looking at the other bag in the freezer (neither of us who were there ordered it or put it away, the people who did should have checked and left a note) ingredients number 2 was wheat. We had totally sold some gluten free pizzas with that pep and everyone genuinely felt guilty. So, yeah, we're burnt out and on speed and whatever but like...I've yet to meet a line cook that wouldn't be making amazing food all.the time if yknow, capitalism. Also working in a gross kitchen is gross and people get sick more. Either the place is getting shut down or it's just like...lying.
Yeah if unsanitary conditions in a restaurant causes an outbreak of an infectious disease, you can just declare that you don’t consent to being infected by it and then the disease is obligated by property law to not infect you.
