Yep. These large retail / food service places will play hardball and do exactly that.
The key will be to unionize fast enough that you can do strikes in solidarity across entire regions. Close down 50% of their stores in three states to get the first contract.
Knew someone that worked at Trader Joe's during the holiday season like 20 years ago that mentioned he was constantly guilt tripped into not taking breaks, told he wasn't a team player or some shit.
