    I can't tell how ironic this post is, but China's working on breeding monounsaturated strains of soybeans: https://www.nature.com/articles/d41586-022-00395-x

    There's already hi-oleic varieties of sunflower, safflower, and peanut oil out there. I think corn and soybean oil are the only ones that I haven't seen.

      Not even sure what all this means, just assuming the US has taken the worst possible approach and it involves corn, my mortal enemy
