Why is this potato cut up and then packaged?

the target demos for this are people who can't cook for shit but still want a fresh meal, people who are so stressed out they can't be arsed to cook but still want a fresh meal, and people who are disabled or elderly and struggle with or are incapable of peeling and cutting up vegetables themselves.
